
I thought this eggplant deserved the spotlight

Meal #1- fresh salsa

Ingredients- All the tomatos & peppers from this week's box. I also added in some onion, garlic, lime juice, cumin, and cilantro. I'm out of fresh cilantro, so I used a spice jar of dried cilantro I have for just such emergencies.
Oops, over processed. I was too distracted by playing with shutterspeeds.

I usually leave my salsa chunkier. It is not as red as usual because of the yellow tomatos, but it taste great. This is my new salsa bowl from one of my partners in CSA, Jeanie.

Meal #2- Lentil Pilaf with eggplant, squash & bell pepper

I'm taking a shortcut tonight & using a boxed lentil meal. I cooked the veggies in some olive oil & made the lentil pilaf according to the box. I threw in some craisens, because I am in a craisen phase right now.



Lunch for tomorrow. I can't wait! Britt Farms blueberries, watermelon, salsa & veggie mix.
