Cooking with my crop share from Britt Farms

This April, I joined a CSA (community supported agriculture) with Britt Farms. I am splitting a couple’s box with two of my friends.

I decided to join the CSA to encourage me with a few goals of mine:
1. Eat more vegetables & a bigger variety
2. Cook more
3. Eat more natural food
4. Eat more locally grown food

So far it has been a success. I’ll admit I was scared that I wouldn’t know what to do when the boxes of food started coming. I’ve had a few busy weeks where I got behind on cooking, but I’ve managed to cook most of my food. I know it will be a lot easier next year.

I decided to start a food journal of meals I’ve made with my box of crops. I thought it would be a good way to spread the word about CSA’s & Britt Farms.

Here is 1/3rd of our July 28th box. The watermelon is not pictured because I ate it before taking the picture. Watermelons do not last long around me and the Britt Farm watermelons are wonderful.

Tonight’s Meal- Thai Curry with Eggplant, Squash, Tomato, Onion & Cranberries


Last week I used a box of Yellow Curry Rice (from Kroger). This week I am making my own rice.

Ingredients:
Brown Jasmine Rice (trader joe’s)
Thai Yellow Curry Sauce (trader joe’s)
Clove of garlic

Cumin
Ginger
Cinnamon
People love cinnamon. It should be on tables at restaurants along with salt and pepper. Anytime anyone says, "Oh This is so good. What's in it?" The answer invariably comes back, Cinnamon. ~Jerry Seinfeld

Sorry, back to the ingredients. The following were all from my CSA box:
Eggplant
Squash
Tomatoes
Onion
Bell pepper

Steps:
I started the rice according to the directions on the package. Then I chopped up all the veggies and cooked them in some olive oil.

Once the rice was finished, I added the curry sauce, spices & craisens.

Then I mixed it all together into one simple & delicious meal.
